KALE, ORANGE AND HAZELNUT SALAD. 01/11/14
This is a great winter salad recipe.
INGREDIENTS METHOD

SERVES 6


300g/10½oz curly kale 
1 orange, peeled 
3 tbsp roasted hazelnuts, roughly chopped 
3 tbsp crème fraîche 
2 tbsp grated Parmesan 
Juice of ½ lemon 
2 tbsp extra virgin olive oil

On a big board, shred the kale until fine (the finer it is, the easier it is to chew) and place in a salad bowl. Finely slice the orange into rounds, then each round into quarters, then add them to the bowl as well, along with the hazelnuts.

 

In a small glass or jar, combine the crème fraîche, Parmesan, lemon juice and oil. Season well, then pour over the salad. Mix well so every leaf is covered, then serve.
