SODA BREAD 07/06/14
Soda bread is a brilliant recipe to have up your sleeve - it's the fastest bread around.
INGREDIENTS METHOD

Makes 1 loaf

 

450g/1lb plain white flour

1 tsp salt

1 tsp bicarbonate of soda

400ml/14fl oz buttermilk

 

 

Preheat the oven to 220C/425F/gas 7. Sift the flour, salt and bicarbonate into a large bowl and make a well in the centre.

 

Pour in the buttermilk, then mix with your hand. Once you have brought the dough together, transfer to a floured surface.

 

Make your hand into a claw shape and mix quickly but boldly, ensuring that you don’t overwork the dough. Shape into a round about 5cm/2in thick.

Lightly flour a baking tray and carefully transfer the bread onto the tray.

 

Score a cross 4cm/1½in deep on the top of the bread and place in the oven for 10 minutes, then reduce the oven to 180C/350F/gas 4 and bake for a further 30-40 minutes until the loaf is golden and sounds hollow when you tap the base.

 

Let the bread cool on a wire rack before eating with lots of butter and jam.
